- 500 g. wheat kibbeh (trigo para quibe "bulgur")
- 1 l. of boiling water
- 500 g of minced meat
- 1 large onion, finely chopped
- 4 finely chopped garlic cloves
- 2 sprigs of finely chopped Roman mint
- 2 teaspoons of pepper
- Salt to taste
- Fry oil
Soak the kibe grain in 1 liter of boiling water. Leave for 3 hours to hydrate well until it absorbs all the water.
After this time, add the other ingredients: minced meat, onion, garlic, mint, pepper and salt. Mix well until it becomes a consistent mass and blended well.
How to make sure that the kibe does not shatter during frying? You need to knead the mixture very well with your hands for at least 10-15 minutes, until it becomes smooth and compact. Or if you prefer, you can use the food processor: in this case, add the mint only after mixing well, so as not to oxidize the mint.
With your hands now form balls to crush with a double tip that would be the shape of the classic kibe (elongated and with the ends pierced) after which fry in hot oil until golden brown on all sides. Remove and place it on absorbent paper and serve your fried kibe when it has cooled down. Simple and delicious. Enjoy your meal!
